Easy Crockpot Potato Soup

Time for another Pinterest recipe! This one is from the blog Glued to My Crafts, and here’s the recipe. It’s for a yummy & easy potato soup. The only thing I did differently from the recipe is I used a wooden spoon to kind of mash the potatoes up after they were done cooking in the Crockpot. Here’s how mine turned out:

Sick Day Smoothie

I’m working from home today. Yay. Before you get all jealous let me tell you I’m laid up with the crud and will have to go out to work some tomorrow, Saturday, to get caught up. So don’t be too jealous. I managed to drag myself out of bed and decided I needed a vitamin packed punch to kick this bug. So I threw some things in the good ole ninja and now have a “sick day smoothie.”

Sick Day Smoothie

So, now you can be jealous. This simple, 4 ingredient smoothie is delicious!

Recipe:

1 banana
2 clementines
2 tablespoons of cottage cheese
3/4 cup ice

Dump it in and blend! (I use my shorter ninja pitcher. It seems to make smoothies thicker.)

Yes, I know what you are thinking… cottage cheese? Yuck! I took a chance with it because I didn’t have any plain yogurt in the fridge and I wanted the protein, calcium and cultures. A lot of times I add whipped cream to my smoothies for thickness and as a sweetener, but didn’t want that in a sick day smoothie and didn’t even need it! The consistency and taste were both perfect just as it is! I think I’ll be drinking it on days that I’m not even sick.

p.s. I had to come into work for a few minutes before finishing this short post. lol So, don’t type too soon. πŸ˜‰ Glad I had the smoothie though, it made me feel much better!

Crockpot Stuffed Peppers

Time for another Pinterest recipe! This one is made in my very favorite object…the Crockpot! The recipe is from The Recipe CriticΒ and here’s the actual recipe.

These were very easy to make. I stuffed the peppers the night before, kept them in the fridge overnight, and just threw them in the Crockpot to cook during the day. When I got home from work, they smelled amazing. The recipe calls for water, which I didn’t add. I’m glad I didn’t, because they were just a tad more watery than I like. Next time I will probably drain the tomatoes. Anyway, here’s how mine turned out:image

Yummy Veggie Enchiladas

I wanted to share another easy recipe with y’all that I’ve tried recently. This one I also found on Pinterest (the only place I really get recipes from). It’s for roasted vegetable stacked enchiladas.

Easy Salmon Dinner

I wanted to share a quick dinner recipe with y’all. This one is for salmon with pesto, fresh green beans, & grape tomatoes.

And I’ll be honest: if a recipe isn’t easy, you won’t find me using it! Β I found this recipe on Pinterest and it’s from the Cooking Classy website. Here’s the actual recipe.

Sweet Summertime Watermelon Lemon Lime Spritzer

Sweet Summertime Watermelon Lemon Lime Spritzer!

Say that ten times fast! πŸ™‚ My parents brought me a watermelon the other day and well, I’ve been trying to figure out how I’m going to eat it all. PoshBrunette helped me eat quite a bit, but I have a refrigerator full of it! My husband somehow forgets it’s there, so it’s up to me to devour it. I had some lemons, limes and club soda already and I love watermelon so, I decided I would try creating a nice little spritzer with it all and was amazed at how delicious it turned out! Here’s what I did…

1. Toss some watermelon in a blender. I use a ninja. I cut it into cubes and dropped it in at about 6 cups. Blend away! It ended up being around 3 cups, so basically whatever you chop and throw in there will be about half that amount liquified.

2. Squeeze 1/2-1 whole Lime and 1 whole Lemon into the melon mixture. I love the pulp so I just took the seeds out of the lemon and cut out a lot of the pulp and dropped it in. (I don’t like Lime quite as much as lemon).

Add Lemon and Lime

3. Add 2 cups of ice cubes and blend away!

4. Stir in 2 cups of club soda.

5. Garnish with a lime. You may even wanna give it a quick squeeze and voila! You have a Sweet Summertime Watermelon Lemon Lime Spritzer! Delicioso! I just love it! Its such a healthy drink and great for detoxing!

This yielded 6 cups.

P.S.Β  I love lemon a lot! So I put a whole lemon in. It still wasn’t very strong or sour, but if you like a stronger taste I would add more lemon and lime or even some grapefruit. I may try that next time. The watermelon has a great, natural sweetness and texture that I love. You may even want to try a little sugar or salt rim. Maybe twist it into a margarita! πŸ˜‰ Try your own modifications and let me know how it turns out!

Seriously The BEST Blueberry Banana Bread on the Planet!

#1 Blueberry Banana Bread (or just plain Banana Bread) Recipe Ever! No Joke.

I have been making banana bread for a couple years now. I grabbed a recipe off a friend, because hers was absolutely to die for. I’ve ended up making a couple of slight additions and am now passing it on to you! For the longest time I made the full recipe and yielded a pretty large loaf, however with it just being my husband and I we never would be able to finish it all. So, I bought a little loaf pan (hint: it doesn’t need to be anything special the dollar store has the perfect size for a little loaf) and halved all the ingredients, except bananas. The original recipe called for 3 bananas and I still use 2. I also decided to try it with blueberries and it was killer! I think I will also eventually try it with raspberries and blackberries.image

Here is the recipe I’m using. If you would like to make a large loaf you will need to double all ingredients and use 3-4 bananas depending on how bananas you are! The cook time is usually about the same either way.

Ingredients:
1/4 cup butter @ room temp.
1/2 cup sugar
1/4 teaspoon salt
1 egg
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
3/4 cup all purpose flour
2 ripe bananas
1 cup blueberries

What to do:
Preheat oven to 350 degrees.
Grease a little loaf pan.
Mix butter and sugar well.
Slowly add all other ingredients mixing each in well.
*I do vanilla extract last on the 1/2 teaspoon items, so I only have to dirty one measuring spoon for that. I also slice the bananas up as I add them in and then just mash them some with the spatula as I stir it all up. I use a silicone spatula to mix all ingredients and it is sufficient. Fold in the blueberries.

Make sure you greased the little loaf pan and pour the batter in evenly. Bake on center rack for about 60 min. Every oven is different. You will want to check it around 50-55 min. The top should all be golden brown. Check that the center is done. Usually the center will begin to crack and you should be able to check with a toothpick to make sure it isn’t still doughy. If it looks mushy in the center, then it probably is, so wait a few more minutes. Try to not take it out too soon or the middle will fall and it will be too doughy for some people!
